It is not a coffee aroma enhancement, it is coffee aroma in its true essence.

When it comes to the wide range of coffee on the market, the instant variety is often perceived to be the inferior cousin of that which is brewed from freshly ground beans. This is due to the traditional industrial process whereby the coffee beans are transformed into soluble powder or granules.

During this process, high temperatures and pressures can destroy the unique flavours inherent to coffee beans from different regions. The roasted ground flavour associated with brewed coffee largely disappears and, ultimately, the result is a product that is not as desired by consumers.

Australian flavour specialist Flavourtech has developed a range of equipment that has revolutionised this process, allowing coffee producers to lock in the taste, aroma and volatile compounds that are typically lost in the traditional instant coffee process.

Used by ready-to-drink (RTD) tea companies for more than 20 years, the Integrated Extraction System (IES) now combines Flavourtech’s core Spinning Cone Column (SCC) technology with the Rotating Disc Column (RDC), producing a continuous, automated processing line that is ideal for instant, cold brew and RTD coffee and tea producers.

Spinning Cone Column (SCC) for a gentle extraction process

For many years, the SCC has been used in the instant coffee process to capture as much of the aroma that is left after the traditional high-temperature extraction process is complete.

In Flavourtech’s new IES), the aroma recovery step has been positioned before the extraction process, thereby protecting the delicate aroma from any high-temperature processing. For the manufacturer, the key benefit is being able to produce instant coffee that tastes like a fresh brew by retaining those natural coffee flavours, whether it is Arabica from Colombia, Guatemala or Ethiopia.

The SCC’s distinct advantage is that it uses vacuum and steam to extract and recover volatile compounds, a gentler process compared to standard methods. When the aroma and high-temperature extract are recombined at the end of the manufacturing process, the result is a coffee that tastes as though it has been freshly brewed, with the convenience of instant coffee. This is also true when using the IES for RTD coffees and cold brews, which are two of the fastest-growing beverage segments globally.

The IES is helping coffee producers across the globe to provide premium-tasting coffee. The user-friendly equipment has a small footprint and is flexible in design. Not only can it be used to produce instant and RTD coffee, but the same system can be used for instant and RTD tea.

All of this amounts to a significant step forward for the coffee industry. Instant coffee companies can now become true beverage companies with lower capital and infrastructure costs than ever before.

Rotating Disc Column (RDC) for perfect coffee particles in 20 minutes

The RDC is a precise-mixing high-temperature column that allows an operator to accurately control the residence time and temperature within the system. The RDC process ensures that each coffee particle is cut to the same size and mixed with the required amount of water.

From the bottom of the column, this slurry is then pushed up through the RDC, ensuring identical brewing time and consistency. The whole process takes just 20 minutes, providing significant time savings compared to the several-hour-long traditional extraction method.

Capture premium roasted coffee flavours with the IES

Importantly for instant coffee producers, the IES now allows the valuable flavour of the roasted coffee beans to be captured by the SCC and protected prior to the high-temperature extraction in the RDC.

For larger producers, the coffee extracts can be gently concentrated to high levels using the thin-film Centritherm evaporator that has only one-second heat contact time on the product. The protected intact flavours are then added to the concentrate prior to the drying stage.

The end result: a premium instant coffee for domestic or export markets.

Ahead of the pack

Just as the proof of the pudding is in the eating, the proof of Flavourtech’s coffee-making process is in the tasting. The next step for prospective customers is to conduct trials of their own roasted coffee at Flavourtech’s pilot plant facilities in Griffith, Australia.

CBD: os benefícios medicinais da cannabis

O famoso CBD, ou canabidiol, é um dos componentes mais conhecidos da maconha. Enquanto o THC ainda ocupa o primeiro lugar em popularidade devido à suas propriedades psicoativas responsáveis pelo barato, o CBD tem ganhado cada vez mais presença na mídia, nos consultórios médicos, nos laboratórios, e no debate sobre a planta. Isso se deve ao valor medicinal do canabinoide, que ficou conhecido por auxiliar no tratamento da epilepsia e outras doenças. Nesse artigo, debateremos as seguintes questões:

• Para que serve o CBD?
• Como pode ser usado?
• Qual é a diferença entre o CBD isolado e em sua forma natural, na maconha?

Os efeitos do CBD
O CBD é um canabinoide que, assim como o THC, se liga aos receptores de canabinoides espalhados pelo corpo humano, conhecidos como CB1 e CB2.

Diferente do THC, contudo, o Canabidiol não é psicoativo, ou seja, ele não causa o famoso “barato”. O CBD contrapõe alguns dos efeitos do THC, interagindo diretamente com ele. Pacientes informam que com o THC usado isoladamente, como na forma de dronabinol (THC sintético), os efeitos psicoativos são muito fortes, podendo causar paranoia, tontura e outros efeitos desagradáveis.
Em conjunto com o Canabidiol, contudo, esses efeitos negativos do THC são suavizados, enquanto seus efeitos medicinais permanecem os mesmos ou aumentam. Outros componentes da cannabis também interagem dessa maneira. O CBD, entretanto, é mais abundante, perdendo somente para o THC na maioria das cepas da planta.

O CBD possui um efeito sedativo. Plantas com alto teor tendem a causar mais sono e relaxamento quando consumidas. Esse efeito também é acentuado dependo da forma de preparação do extrato. CBD como neuroprotetor
O CBD ficou conhecido por sua associação com o tratamento da epilepsia. Quando diversos casos de crianças sendo tratadas com extratos de cannabis começaram a aparecer em 2014, cada vez mais a palavra CBD era utilizada na mídia. Numa tentativa de desvencilhar o Canabidiol da maconha, o componente foi mencionado dezenas de vezes como se fosse o único canabinoide que pudesse tratar doenças.

De fato, o CBD foi estudado como um potencial neuroprotetor. O componente parece proteger células nervosas de se superexcitarem – processo que ocorre naturalmente em pessoas saudáveis, mas em excesso na epilepsia, causando as características convulsões e espasmos. Outros canabinoides, contudo – como o próprio THC – também possuem efeito neuroprotetor. É possível que esses componentes ajam em conjunto com o Canabidiol para a tratar a epilepsia.

O CBD isolado está sendo testado como tratamento para a epilepsia de difícil tratamento, mas ainda não há evidências suficientes de sua eficácia, bem como a planta em sua forma natural. Relatos de centenas de famílias, contudo, demonstram resultados impressionantes. Em todos esses casos, ele não foi utilizado isoladamente, mas em conjunto com outros componentes.

CBD como anti-inflamatório
O CBD parece ter propriedades anti-inflamatórias, demonstrando potencial para o tratamento de diversas doenças inflamatórias, como a artrite reumatoide, a esclerose múltipla, a doença de Crohn, diabetes tipo 1, entre muitas outras.

Esse efeito foi observado tanto com o Canabidiol isolado como em sua forma natural (maconha rica em CBD). Um estudo comparando a eficácias das duas formas, contudo, concluiu que a cepa de cannabis rica em CBD é um anti-inflamatório superior ao CBD isolado.

Mais estudos são necessários para determinar a eficácia do Canabidiol como um anti-inflamatório.

CBD no tratamento da dor
Diferente do THC, o CBD isolado não possui efeito analgésico. Utilizado em conjunto com o THC, contudo, ele parece potencializar os efeitos do THC no combate à dor crônica, sobretudo a dor neuropática (comum em pacientes com câncer ou AIDS, por exemplo). Ao que tudo indica, o CBD e o THC em conjunto são mais eficazes do que o THC isolado no tratamento da dor.

É importante salientar que dosagens altas de THC causam aumento na sensação de dor, enquanto dosagens mais baixas tendem a diminuir a dor. É importante, portanto, encontrar a dosagem adequada para o tratamento em questão, inclusive o equilíbrio entre o THC e o CBD, que varia entre diferentes cepas da maconha. Pesquisadores explicam que a cannabis não bloqueia a dor como opiáceos, por exemplo. Ela parece simplesmente aumentar a capacidade do usuário em tolerar a dor.

Com abundante evidência envolvendo o uso da cannabis no tratamento da dor, a planta já é aceita como um analgésico pela medicina tradicional. Em estados americanos onde o uso medicinal da cannabis foi legalizado, as vendas de analgésicos a base de opiáceos caiu consideravelmente, indicando uma preferência pela cannabis por parte de muitos pacientes.

CBD e distúrbios psiquiátricos
Enquanto o THC pode desencadear efeitos psicóticos em pessoas com sensibilidade a seus efeitos; ou em pessoas que já sofrem ou sofrerão algum tipo de psicose (como a esquizofrenia), o CBD tem efeito antipsicótico. Diversas pesquisas indicaram esse efeito, inclusive estudos realizados no Brasil, na USP de Ribeirão Preto.

Não há ainda, contudo, estudos clínicos amplos para determinar a eficácia do Canabidiol nesse sentido. Os poucos estudos realizados em humanos utilizaram a substância isolada. Há apenas relatos de pacientes sobre o uso da cannabis in natura no tratamento de psicose. Como não sabemos a segurança do uso da maconha em pacientes psicóticos, não é recomendado o uso, mesmo de plantas ricas em CBD e com baixo teor de THC.

Pesquisas com pacientes que automedicam com cannabis identificaram um alto número de pessoas utilizando a erva para tratar problemas psiquiátricos; com ou sem acompanhamento médico. Uma pesquisa realizada na Califórnia, em 1999, identificou 660 (26,6%) pacientes automedicando problemas psiquiátricos com cannabis. Entre eles, 274 sofriam de stress pós-traumático; 162 de depressão; 73 de ansiedade; 46 de depressão neurótica; 34 de desordem bipolar; 26 de esquizofrenia; 15 de déficit de atenção; 8 de distúrbio obsessivo-compulsivo; 5 de síndrome do pânico; 17 de outras enfermidades.

O efeito sedativo do Canabidiol parece acalmar pacientes psiquiátricos, mas os efeitos da cannabis por inteira estão obscurecidos pela falta de estudos. O sistema endocanabinoide parece estar diretamente ligado ao funcionamento do cérebro. Ao bloquear receptores de canabinoides, cientistas observaram que pacientes entravam em depressão e tinham pensamentos suicidas. O bom funcionamento do sistema endocanabinoide, portanto, deve estar associado a um cérebro saudável, o que indica um forte potencial da cannabis no tratamento de distúrbios psiquiátricos.

Conforme mencionado anteriormente, mais estudos são necessários para determinar a eficácia e segurança da maconha nesses casos. É importante, portanto, ter muito cuidado e somente se medicar com acompanhamento médico.

CBD e câncer

Em diversos estudos pré-clínicos (em laboratório ou em animais, não em humanos), o CBD demonstrou forte potencial no tratamento de diferentes tipos de câncer. Centenas de estudos demonstram efeitos antitumorais e anticancerígenos por parte do Canabidiol isolado. Estudos em humanos, contudo, são necessários para determinar se o CBD realmente pode ser utilizado nesse tratamento.

Outros tratamentos

O CBD é um componente com impressionante potencial terapêutico, sendo cogitado em diversos tratamentos, como o mal de Parkinson, insônia, espasmos musculares, entre diversas outras enfermidades.

Faltam investimentos em estudos, não somente com o CBD, mas com a cannabis como um todo, já que diversos de seus componentes parecem agir no organismo e até potencializar os efeitos terapêuticos uns dos outros. Apesar da grande atenção que o CBD tem recebido, é preciso lembrar que ele é apenas um componente, dentre diversos outros presentes na planta, e ele nem é o mais estudado.

Mais conhecimento sobre esse e outros componentes pode significar uma expansão na compreensão da biologia humana e um passo à frente no tratamento de dezenas de enfermidades. Quanto mais soubermos sobre o CBD e a cannabis, mais podemos avançar na luta pelo direito à vida e ao tratamento de escolha de pacientes-usuários.

Client: …..Hello ?!?!? Is it ZAXX Corp? I saw an advertisement from your company on the internet, about...

Sales person: (at very high speed) .... About our promotion of "radar level sensors"? It's an offer not to be missed, isn´t it? It costs only $ 999,00 each, that you can make a down payment and then pay the residue in two equal payments and we can deliver today. So, how many do you want?

Client: ...well, I...hum, in truth I need...

Sales person: Just one?!? .... Okay. What is your credit card number?

And believe me, the customer ended up buying.

Some days later:

Client: Hello?!?!, Is it ZAXX Corp? I bought a few days ago a large size radar level sensor from a girl who works there, I made the down payment with my credit card, and I still have not received it, could you...

(sound of many people complaining about the system problem on the background)... Darling... I think you'd rather call sales... you know, honey ... here's just the financial department and we don´t actually manage customer service here. I suggest you to call again, because I can´t transfer your call, and ask to talk to sales. Thank you. (and she hangs up the phone).

Client: ...Hello, is it the sales department at ZAXX Corp? I bouth a large size radar level sensor from a girl who works in sales, I made the down payment with my credit card but I still haven´t  receive my order. I called the expedition, they asked me for a protocol number that I still do not have and I was told to call to the financial department. As I reached the financial department they were not able to locate my order and they told me to call to sales...    

ZAXX Corp: They told you to call here? Here is only sales not customer care, we only manage sales here... But that´s alright, I will do you a favor. What is your name?

ZAXX Corp: Hummm... Just a second (lot os yelling on the background)... Oh, there it is... Rafael, your order was not delivered because we ran out of large sizes radar level sensors, our inventory was not updated in the past few weeks. They should had told you, but it is a mess here, you should see it... but we have already received a new lot of it, and by tomorrow you will receive it in your address, okay? Thank you (and quickly hangs up the phone).

A week later, the client receives the order at his address, not only one, but two small size brix analisers and a invoice of $ 10.000 thousand charged at once in a single instalment, on his credit card...

Some days later, during a party at his local club:

Bob: Rafael, my dear friend, I´m happy to see you, it´s been a long time. How have you been? What have you been doing?

Rafael: Oh, my friend... it is so nice to see you, I´m working as a sales consultant for the beverage industry, how about you?

Bob: I opened a company... it is called... ZAXX Corp... and I´am selling a lot my friend, but I credit it to my personal, they are 100%, top notch!...

Rafael: Oh, good ?!?! So come on over and sit down, I have a nice little story to tell you...

Bottom line:

1. All of the employees, regardless of function or position, they are all responsible for the company's image and customer service. There is no use spending a lot of money on high-tech products if someone answers the phone without any professional notion.
2. All companies have their own internal problems. This is perfectly normal, and manageable. But we should never use these problems as excuses for customer service failures. The client has nothing to do with it.
3. If your company is only concerned with sales, urgently review your goals. Nowadays the quality of customer service is a big factor of success, or failure.
4. Facilitate customer access to your business. The client should not be seduced to buy and then be abandoned or have to go through an ordeal to solve a possible problem.
5. The customer makes many comparisons. Not only with your competitor, but with companies from other segments. Mainly regarding the quality of customer service.
6. Never stay away from the front line. Being present at the service counter, as well as at the sales desk and other sectors of the company. You can anticipate and solve many problems from even occur.
7. Treat the customer with respect. Always by the name and with the correct title of treatment. (Sir, Mr, Miss, Mrs, etc ...).
8. Develop tools to ensure accurate delivery as the customer has purchased. Managing complaints is not the social goal in your company.
9. Customer service "is not a favor". It's a product. And if this product is good, the customer comes back.
10. And finally: If you want to know how the customer service in your company is, just make a phone call...

Santo Arnulfo de Metz, o santo padroeiro dos cervejeiros.

Alguns católicos pensam que o consumo de cerveja e outras bebidas alcoólicas é pecado. Sem embargo, a Igreja não vê problema no consumo moderado de álcool, sempre e, quando este se faça com responsabilidade e não ponha em risco nossa santificação. Também devemos recordar que a Igreja tem um rito em latim para abençoar a cerveja e, como não, também temos a São Arnulfo de Metz, padroeiro dos cervejeiros. Hoje falaremos sobre a vida desse grande santo.

Sua proximidade da fé:

Arnulfo nasceu na Áustria, no ano de 580, em tempos que o país era muito famoso por elaborar cervejas de excelente qualidade. Desde pequeno se sentia chamado a seguir a Deus, e por isso, entrou num monastério beneditino, sendo muito jovem. Posteriormente foi nomeado abade, finalmente bispo de Metz, na França, aos 32 anos.

Tomar cerveja ou morrer:

Sendo bispo de Metz chegou a dita região uma peste terrível que contaminou a água e muita gente ficou doente por consumi-la, por essa razão Santo Arnulfo animava seus fiéis a deixar de consumir a agua contaminada e beber cerveja. hoje sabemos que ao ferver a água para a fabricação da cerveja esta fica livre dos germes que produziam a enfermidade.

A multiplicação da cerveja:

No ano de 627, Santo Arnulfo, se retirou a um mosteiro perto de Remiremont na França onde morreu e foi enterrado, em 640. No ano seguinte, os cidadãos de Metz pediram que seu corpo fosse exumado e  levado a cidade para enterrá-lo na Igreja local. Enquanto carregavam o corpo de volta, vários fiéis sentiram-se cansados, esgotados e pararam numa taberna para comprar cerveja. Ao entrar, descobriram com tristeza que só havia uma garrafa e tiveram que compartilhar. Surpreendentemente a garrafa nunca acabou e todos puderam beber a cerveja e matar sua sede. O milagre foi atribuído a São Arnulfo e é a razão pela qual a Igreja o considera o santo padroeiro dos cervejeiros.

Hoje em dia é venerado como santo na Igreja católica e na Igreja ortodoxa e sua festa em 18 de julho.
